Many businesses need people to train their employees for one reason or another. Often times, businesses will hire teachers for this training. Many times, these businesses will provide you with the training you need to understand the subject matter you will be teaching.
Many textbook publishers look to former teachers to help sell their materials to schools. The publishers will send you from school to school where you can meet with principals and try to ge them to buy materials from the company you represent. As a teacher, you can explain to the principals exactly how the materials will benefit them the most.
If you have a degree in art or science, you could get a job in a museum. They look for educators to write curriculum for class trips, to coordinate this curriculum with state standards, and to create materials that teachers can use in the classroom to prepare their students for the trip, or to use as support after the trip.

Have you looked into civil service jobs in your state? They may have positions for people who advise the public schools or help establish curriculum or standards. Also, there may be adult education positions which would allow you to teach adults and contribute to your community in that way. I would contact a nearby university and ask to speak to someone who specializes in career counseling. Perhaps they could give you more ideas.

I could be a chemical engineer or a chemist and those pay either a little less or a little more depending. Probably most would be less at first, and less vacation and less benefits and security, but would end up paying more after a long time.
I also did phlebotomy and that would be less at first, but way less after a while.
